Competent Deer Stalker Awards

– Venison Butchery –

Our Venison Butchery Course teaches deer stalkers all the fundamental skills and knowledge that are required to store, larder, butcher and process restaurant quality venison.

In our intensive one day Venison Butchery Course*, you will learn:

Morning Session

  • Welcome and introduction
  • How to store deer
  • Larder construction
  • Larder record systems
  • Health and safety working practices
  • Knife selection, sharpening and handling techniques
  • Larder and equipment cleaning
  • How to skin a deer
  • Removing shot damage
  • Breaking down a carcass into primal cuts

Afternoon session

  • Primary cuts of venison
  • Seam butchery
  • Preparing and cutting steaks
  • Be-boning joints
  • Preparing roasting joints
  • How to tie a joint using butchers string
  • How to use larder machinery safely
  • Venison seasoning
  • Produce sausages, burgers and mince
  • Vacuum packing
  • Cooking techniques and recipes

* At the end of this course you will be confident in your venison handling and larder skills, be able to skin butcher and process a whole deer carcass and prepare restaurant quality venison cuts for the table. All candidates receive a course certificate, which can be presented as proof of training.

*Participants are welcome to process a deer harvested by themselves. Participants without a deer to butcher will be provided with a roe or young fallow deer, which is charged at £2kg.

No prior knowledge is required for this course, which is suitable for both beginners and participants with some experience. A Gift Voucher is available to purchase this course.

Availability | Courses run Monday to Saturday each week throughout the year. Courses can usually be arranged with as little as 48 hours notice.

Participant Guidelines | Minimum age is 15. We are able to accommodate people with disabilities at some venues

Duration | The course starts at 9am and finishes at 5pm (other times can be accommodated upon request).
